Blueberry Banana Muffins

Remember when muffins were smaller than your fist?
Ya me either.
And this is WHY I created this recipe! Because we should all be free to enjoy a muffin without feeling comatose, or starving in an hour (that’s a story for another day!)
These muffins are packed with nutrients yet still taste AMAZING!

Ingredients
1 1/2 cups organic white wheat flour
1 1/2 cups ancient grain flour (I chose a King arthur mix)
2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
1 stick (8 TBSP) butter
1/2 cup cocunut sugar
2 tsp vanilla extract
3 large eggs
1 tsp cinnamon
1/2 cup plain greek yogurt OR sour cream
2 tsp chia seeds
3 ripe bananas
1 cup frozen wild blueberries
Instructions:
Preheat oven to 400 degrees and line two muffin tins with liners (bleach free is preferable).
Combine dry ingredients, except chia seeds. Set aside
In mixer, cream butter and sugar together until light and fluffly (about 5 min)
Add eggs, vanilla, bananas, and yogurt. mix until combined.
Slowly add in dry ingredients (except chia seeds) and mix until combined
Stir in blueberries and chia seeds.
Pour into muffin tins, bake 20 min.
Remove from tin and allow to cool on rack.
